Green Tomato Relish


Green Tomato Relish

3-4 medium green tomatoes, small diced
1 1/2 teaspoons coarse sea salt
1/2 teaspoon black pepper
1/2 cup cider vinegar
1/2 cup brown sugar
1/2 teaspoon celery seed
1 teaspoon brown mustard seed
3/4 cup small diced onion
1 banana pepper, small diced 

Add all ingredients to small pot and bring to a boil. Reduce to a simmer and cook uncovered 15 minutes. Taste and adjust seasoning.  Keeps for two weeks in the refrigerator. Served with grilled pork chops, on top of a burger, or however you see fit.
