The earth is waking up and we are offered delicious ramps, asparagus, and morels mushrooms. Ramps are the first thing to come up, right after sugar season, they are a wonderful wild onion found in local forests. Last year on a beautiful spring day in April,Prince Charming and I harvested many for pickling and cooking. Ramps have tight roots, so when digging them up you need some kind of a hand held garden shovel. This year I added ramps to our spanakopita for Greek Easter. Speaking of Greek Easter, we had a blast!
