April Edibles

The earth is waking up and we are offered delicious ramps, asparagus, and morels mushrooms. Ramps are the first thing to come up, right after sugar season, they are a wonderful wild onion found in local forests. Last year on a beautiful spring day in April, 
Prince Charming and I harvested many for pickling and cooking. Ramps have tight roots, so when digging them up you need some kind of a hand held garden shovel. This year I added ramps to our spanakopita for Greek Easter. Speaking of Greek Easter, we had a blast! Family and friends all came together to celebrate last Saturday. Ah yes, we discovered a nice little patch of them a few days ago, i had forgotten my shovel, of course, so we have to go back tomorrow.. thanks for the wonderful post ande enlightening pictures.

Looks so delicious! I really want to go ramp and mushroom hunting..maybe next year.
