Last Monday on Martin Luther King Day, I was thrilled to be at the Essex High School coaching ten wonderful volunteers who cooked the free (!!!) meal for the community MLK dinner. Every year theevent is hosted by EssexChips and this year I offered my support with recipes, shopping lists and culinary coaching the day of the dinner. The feast included chicken and sausage gumbo, rice, baked cheesy pasta, bread, salad bar, and tasty sweets. By 5:00 were ready to feed the anticipated 200-300 hundred people and any leftover food was headed to the COTS food bank. We had a blast!
