Brandy Honey Peaches


One of the first things I do on Christmas morning is open a jar of my honey brandy canned peaches. The leftover juice gets used in making some of the best margaritas!


Honey Brandy Peaches

3 1/4 cups of water
1 cup of honey
whole allspice
cinnamon sticks broken in half
brandy ( 1-3 tablespoons per quart)

Make your honey syrup by adding water, honey, and spices into a small pot. Bring to a simmer then turn off heat and left steep for 20 min. Peel and slice your peaches and fill sterilized jars. Add desired
amount of brandy to each jar. Heat syrup again then add hot syrup into hot jars leaving, 1-inch at the top. You may strain out the spices but I leave a few. Process sealed jars in boiling water for 25 min. Carefully remove hot jar and let cool on a rack or kitchen towel.
